We are primarily a gluten-and-dairy-free bakery, but also try to limit our use of other allergens. Using traditional gluten-free ingredients and drawing on a growing number of allergen-free ingredients now becoming available, we strive to provide our customers with the best tasting and highest quality products possible. Our goal is to make products that are not just "good for gluten-free" but just plain good. To serve our growing number of vegan customers, we are also working on developing egg-free (vegan) version of our most popular products. We are working on sugar-free options as well.

We use primarily whole grain brown rice flour in place of wheat. Since rice has no gluten, we use a variety of other ingredients to replace and replicate it: potato starch, tapioca starch, corn starch, sweet rice flour, xanthan gum and others. We also use assorted other grains for flavoring, including millet, sorghum and teff.

Yeast is required to make a dough that rises; all of our bread products use yeast, but the sweets and desserts do not.

Sugar In Our Products

We use primarily organic evaporated cane juice, as well as powdered sugar and brown sugar, with a bit of agave, honey, rice syrup and corn syrup in a few products. At this time we do not have any sugar-free products, but we do have plans to develop some soon. Check out our Facebook page for updates on our progress (Facebook/RisingHeartsBakery.com).

Tree Nuts In Our Products

We do not allow peanuts into the bakery, but we do use almond flour in many of our bread products. We also use pecans, walnuts and cashews in specific products. Please check the ingredient lists for these items.

Soy In Our Products

All products are soy-free, except for the following products. (as a rule, dark chocolate contains soy lecithin).
  • Chocolate Chip Cookies
  • Chocolate Chip Scones
  • Dark Chocolate Cupcakes
  • Dark Chocolate Bundt Cake
  • Ganache Frosting (used on chocolate bundt and dark chocolate cupcakes)
  • Shufra White Chocolate Glaze (used as white drizzle on chocolate bundt cakes)
  • Soy cheese cake uses FYH soy-based cheese products
  • Soy cream cheese frosting on certain cupcakes
  • Scones contain soy milk

Corn In Our Products

We would like to remove corn from our products, but it is virtually impossible. Corn is hidden in many of our ingredients, and is so ubiquitous we cannot eliminate it. Some examples: powdered sugar and baking powder contain corn. Much vanilla extract is made with corn liquor. Xanthan gum is the byproduct of a biological agent that is grown on corn. Earth Balance contains natural flavors derived from corn.

GMOs In Our Products

We would like to be completely non-GMO (Genetically Modified Organism), but it is very difficult to actually track down all of the sources of an ingredient to confirm whether they are GMO or not. One way to make sure we are non-GMO is to buy 100% organic ingredients, which can be difficult to find and cost-prohibitive. We are not GMO free.

Xanthan Gum In Our Products

Xanthan gum is a natural ingredient that is a byproduct of a biological product. It is typically cabbage or corn-based. All of our products contain xanthan gum. We cannot make xanthan-free products.

Citrus In Our Products

We use citrus-based pectin in many of our products. Please check ingredient labels for pectin if you have citrus allergies.

Many of our ingredients themselves use ingredients that may not look familiar, for example methylcellulose. All of these ingredients are safe and accepted ingredients that are widely used in food manufacturing, and most are based on plants.
